Single varietal honey changes with the seasons and once it’s gone, it’s gone until the next bloom. Spring is here again and while the local markets are starting to wind down the beekeeping side of the honey business comes into full swing, but with all of that work brings new and delicious varietal honeys that you, if your like me, just can't wait to try! Tallow Honey and Maple Blossom Honey are part of the new spring crop this year. The Tallow tree grows all over the southeastern United States, our Tallow comes from the gulf coast of Texas and is amazing!!! The Maple Blossom Honey is a very hard honey to find because it blooms so early in the season and likes to be enjoyed by the bees themselves, but we are lucky enough to get away with just a few jars of a simply incredibly flavored honey.
